Beef kidney fat, also called suet, is considered the best quality for rendering because it is a harder, more pure fat found around the kidneys and loins, and it produces a clean, firm tallow with a higher melting point.

However, beef fat doesn’t have to come from around the kidneys to be made into tallow. You can render tallow from other beef fat trimmings, such as those found throughout the animal, including the back, brisket, and other cuts. This fat might have a softer texture and a slightly different composition, but it can still be rendered into tallow for cooking, skincare, or other uses.
